In this strawberry smoothie, the beet stems actually lend to its appealing vibrancy.
1 cup chopped beet stems and greens, frozen
1 cup quartered strawberries, frozen
½ banana, peeled and frozen (or sub 1 orange, ½ pear, or ½ apple, frozen)
1 1” piece ginger root, or to taste (or sub powdered ginger)
½-1 cup cold water (or plant-based milk)
½ teaspoon cinnamon
¼ teaspoon vanilla extract
3 drops liquid stevia
Blend all ingredients until very smooth and as thick as you like. Top with coconut yogurt, blueberries, and hemp seeds.
