Strawberry Beet Stem Smoothie


Beet greens are the most nutritious part of the beet, yet are often thrown away. Save your money, get your vitamins, and make this slushy smoothie.

The thing is, I don’t like how the red stems make my green smoothies look brown. Blame being an aesthetically-minded Taurus. . .

In this strawberry smoothie, the beet stems actually lend to its appealing vibrancy.

1 cup chopped beet stems and greens, frozen

1 cup quartered strawberries, frozen

½ banana, peeled and frozen (or sub 1 orange, ½ pear, or ½ apple, frozen)

1 1” piece ginger root, or to taste (or sub powdered ginger)

½-1 cup cold water (or plant-based milk)

½ teaspoon cinnamon

¼ teaspoon vanilla extract

3 drops liquid stevia

Blend all ingredients until very smooth and as thick as you like. Top with coconut yogurt, blueberries, and hemp seeds.
